dark patches are the belly lining cut it off. they look fine but to judge a fillet job we would have to see the carcass and not the fillets

looks good . I split em on each side of the center line and cut all the dark meat out then brine in saltwater . also as soon as u catch em rip out the gills and put em head down in ice . Some of the best inshore eating imo that way.

Next time just cook the fish whole. Wrap it. Grill it. Yum.

Please just make sure that after you cook them, you insist on praying prior to the meal, and weave in the term ‘holy mackerel’ at least three times.
