I’ve got a spot with a bunch of spawning kings (freshwater stocked), they’re easy to catch I’m just wondering if they’re good to eat? I know they start to decay I just don’t know when they get bad.

    Generally I toss ones that dark back but a lot of folks smoke them. You can eat them too but they won’t be the best.

    Early spawning they’re ok and I prefer them hot smoked. Cajun seasoning is great on them smoked. Later in the spawning season they get really nasty and I wouldn’t eat regardless how they’re made

  4. I personally release any and all adult salmon once they enter the river. Shoot I don’t even keep them once September hits. They lose their flavor, the meat color changes from orange to white, and the texture turns to jelly.

    They are dying. They haven’t eating in weeks or a couple months and they are literally consuming themselves. That’s why they look and taste that way.
