I have had this 5 gallon tank for a couple months now mostly as a shrimp tank but, recently my other tank (betta tank) started leaking and I’m currently deciding on buying a new tank or if I should house him here instead. If I put my betta in here will he eat them all or just a few, I’ll be okay if he eats the occasional one as there are 30+ shrimp

Depends on the personality of the betta. Some are very aggressive and will eat shrimp, others are more docile. I’ve read a story where a betta eats red shrimp but leaves blue ones alone.
Bettas with shrimp fails more often than it succeeds I think. Do at your own risk.
