I also wanted to thank the redit user that posted and show off my vines! I just cut off the bottom few inches and stuck it in the HOB. After a few days there were roots long enough to reach the tank and the sweet potato stays out of the water completely.
I have some grow lights for my monstera next to it but this thing just thrives.
