How do you fish saltwater off a pier?

Me and my friends are renting a house that has a pier on it which is connected to the ocean through a channel. I know how to surf fish but I don’t know how to fish anything like this since it’s not open ocean fishing. Whats the best bait to use in an area like this? Charleston SC
