Pretty sure you can just squeeze on the barb with pliers to flatten it as much as possible to the hook.

Colors are used to match the local forage or to be visible in the water depending on the conditions (that bright green orange lure is used primarily in murky water for example)
Some fish respond more to certain colors than others but it depends on the fishery. You could honestly go with silver and nearly everything would hit it.
