Betta Fish: Aquascape with fish in?

I have seen so many nice aquascapes on here and I have tank envy hard!!

Can I aquascape once a tank has already been established or would it mean starting again from scratch??

I am thinking some drift wood (I live in a coastal area so this is abundantly available), some stones to crest hiding spots rather than the plastic things I have, and many more plants (which plants? I don’t really like the moneywort. The other I have is Java fern which seems ok)

(Ps : This is Kelly Kapowski. She is the most social fish I have ever seen!! I just gravel vacuumed and it was challenging because she kept moving in front of the tube! Nosy girl! Haha!!)
