Working on setting up a new tank and I want a centerpiece fish but I’m stuck! 55 gallon, high flow, shrimp friendly, white cloud mountain minnows, maybe another schooling species, and will have live plants… any suggestions? Picture of my guppy tank so this doesn’t get lost

Harlequin Rasboras would look sick in this tank. You are right to want another schooling fish, they would look lovely in a tank like this. Very well planted!
Maybe a group of Pearl gouramis?
if theres a good current in the tank maybe consider a few bamboo shrimp! theyre filter feeders and theyre super entertaining and cool shrimp 🙂
