Overview of photos

  • Caught a nice ray off of Far Rockaway beach on a bunker chunk. The fellas were getting a ton of fluke and sea robin. With the wind and sun at optimal conditions, I reckon they could hear my fish whistle from 4.00 – 4.40 mile range

  • inventory of necessities for the beach (wings are shio koji marinated, tossed in chupacabra rub, then tossed habanero sauce, then smoked with applewood chips for 1 hour at 250, then refrigerated, then heat it up on the field grill)

  • not my finest field dressing work, but love having a cooler that's heavier on the way out than on the way in

  • cleaned the wings, scored them, then did a 2 minute pre-sear on the grill on my roof

  • and here's a photo of it on the grill with the grill closed (you can see the grill in the bottom right corner)

  • wife prepared it with a Singaporean recipe that I tried once at Street Hawker market in midtown (my first time eating ray and I loved it), you wrap it in banana leaf and fill it with chili peppers and garlic and onions and all sorts of fermented pastes) Then bake it in the leaf

  • It came out amazing, sorry for the terrible after pictures but my hands and face and mouth were shaking from the spice as I had already gobbled a bunch down

  • I couldn't eat all 4 lb of the wings so I VERY carefully wrapped, vacuum sealed, and froze the other Wing. It's pretty delicate flash so I hope that I did it right to not damage the consistency. Hope it comes out well when I thaw it

Overall I think this might be one of the best home caught meals I've ever had. I am surprised that people don't go crazy for these beautiful, cool, delicious fish. I will not lie I felt bad killing such a beautiful creature, but it's life force was not wasted and went on to feed many.
